ディナーの予約が取りにくいのでランチのテイクアウトを求めに行きました(往復と待ち時間を合わせるとほぼ二時間かかった)。朝方に炊き上がり予定時間がツイートされますが、その30分前に行って、限定10食の8番目でした(さらに予備があるのかもしれませんが)。 肉の多いのがハイデラバード式、少ないのがタミル式と稲田俊輔さんのレシピ本にありましたが、少ない方のタミル式です。しかし骨付きのごついマトンの塊がふたつもありました。ビリヤニは大量に盛るのがお決まりですがここもそうでした。容器込み640gという重量にひるみましたが、一気に食べられました。あとで量ったら骨の重量が75gもありました。骨付き肉こそ旨い。 2007年7月のdanchuの記事(それと水野仁輔さんのカレー食べ歩き本)でビリヤニを知り、いままであちこちでビリヤニと称するものを食べましたが、いちばん美味しかったと言わざるを得ません…。

ビリヤニの炊きあがり時間に合わせて客を入れるため、完全予約制での営業という、これまでありそうでなかったビリヤニ専門店。 予約はネットから。ビリヤニの種類は日によって変わりますが、予約時に一緒に注文も入力する仕組みなので、なにが出てくるかわからない、ということはありません。 ビリヤニの米はふかふかのもふもふで驚くほど軽い。油っぽもさなく、抵抗なくさくさく食べられます。それでいてカレーペーストの染みた部分や肉はしっかりスパイス香が出て、食べ進めているうちに骨のかけらやスパイスの破片がコロコロ出てきますが、それも含めてのビリヤニ味です。ライタをかけると一気に爽やかな風味がプラスされれると共に、乳製品ならではのコクも出て、これもまたうまい。パクチーも質のいいものを使っているそうで(契約農家仕入れだそうです)、いやなえぐみはなく爽やかな香りが立ちます。 これはなるべくお腹を空かせて行って、汗をかきながらハフハフがっつきたくなるビリヤニですね! 手食にも挑戦してみたくなってしまいました。 もうひとつ驚きなのは、お店おすすめのコーラ。なんでもビリヤニに最も合う飲み物だとのこと。半信半疑で「おすすめなら……」と注文してみたのですが、これが本当に最高の相性。スパイスで口が疲れてきた頃にコーラを入れると、炭酸の刺激と甘さで一気によみがえります。 思うに、最もコーラをおいしく飲む方法がここのビリヤニと合わせることなのではないでしょうか。

予約のみのビリヤニ専門店。予約時間に行き、カウンターを囲んで座る。 大きなお鍋が運ばれてきて、そこからビリヤニが取り分けられて行く。 ビリヤニは、スパイスやハーブの香りが混じり、じんわりと汗をかく辛さ。とても美味しい。途中で、ヨーグルトのサラダみたいなのを混ぜながら味変しつつ食べる。 写真はフルサイズ。男でもそこそこ満腹になる量がある。

いやー美味しかった!18時45分の回を予約。10分前に着き先ずはビールを。全員が揃ったころ大鍋が運ばれて目の前で平皿によそってくれた。 お米はフワッとしていて、今まで食べたビリヤニとはちがい本当に美味しかった。

Twitterからtablecheckで予約をして伺いました。 噂のビリヤニ専門店の大澤さんです。 二部制で一部は18時45分から。 一部は炊き上がりをすぐいただくことが出来ます。 地下で分かりにくいと書いてありましたが、Google先生に任せて歩くとピタリと店の前(階段)まで案内してくました。さすがです。 階段途中の看板も分かりやすいので迷わず到着です。 中はコの字のカウンターでした。 (元は居酒屋だったのかな?ドラマでコの字酒場ってありましたよね) 予定時間を少しだけ過ぎて、大きな鍋が皆の前にお目見え。 中には20人前のビリヤニが入っているそう。 蓋が開くとバスマティとグレイビーソースの混じった食欲のそそる香りが広がります。 あー。お腹が空いた…。 店主がグレイビーの部分とライスとをバランス良く丁寧に盛り付けて提供してくれます。 いただきます。 まず上層部分ったライスだけのところを。 フワッと軽い食感で良い香りがします。 ライスが多い部分とソースが多い部分を適当に混ぜて、毎回違う味加減を楽しみながら食べていきます 骨付きのマトンも美味しいですね。 途中に味変でライタをかけると、爽やかな酸味が加わり一層美味しくなりました。 どんどん食べ進み、大盛りでしたがあっさり完食しました。 これはまた食べたいですね
