見学に行ってきました。
名古屋コーチン、三河赤鶏、錦爽どりを
取り扱っています。
工場内を見学して思ったのは、
衛生管理の徹底と
マンパワーによる丁寧な手バラシでした。
通常は機械を使用して省力化するところを
鶏肉を傷めないためにも
沢山の人を使って
一つ一つ丁寧に外側から剥がすように解体し、
最後に内臓を丁寧に剥がしてました。
素晴らしい。
胸を張ってお店で出していきます！
