What is characteristic is that rice washing and watering work are performed in very small colanders that are used at home. It seems that this is called limited water absorption. Although it has won the National Variety Assessment Gold Award for more than 10 years, it is difficult to find it outside the prefecture because it is mostly consumed by the prefecture due to the small number of stones produced. My recommendation is Tenjo Mugen Junmai Ginjo Muddy Sake. I think it is the best sake in the top three in Japan. You can also visit the warehouse if you make a reservation in advance by telephone. I can take a tasting so I always take care of foreign friends when they come.
