★ ★ ★ ★ ★ ちょい高いな。鳥南蛮食べたが、普通にうまい。金満のじいちゃんばあちゃんがゆっくり飯食うとこだ。量も少なく、大盛り変更が結構高いから、若者が行ったら悶絶するぜ。

綱島の石挽きそば 蕎真（きょうしん）。綱島街道沿いにあります。
グーグルマップで、あえて行ったことのないお店を検索。もちろん評価イコール自分の好みではないでしょうが、冒険してみたい高評価のお店です。
とても落ち着いた雰囲気。9席のみで昼だけの営業のお店。店内にはクラシックが流れる。
せいろそば770円。これだけでは絶対にオイラの胃袋は満たせないと判断。よくある高級店は三口食べたら終わっちゃうお店なんてありますからと、セットご飯（ご飯、小鉢、お新香）380円を追加。ご飯にはシャケ、鶏そぼろ、じゃこ、アサリの佃煮のトッピングが無料で選べます。
運ばれてきたお蕎麦。思ったほど少なくありませんでした。口コミを見ると蕎麦粉95%つなぎ5%とだそうです。少し辛めのつけ汁、蕎麦の風味を楽しむためかキンキンには冷えていません。蕎麦ツウではない私の好みとしては、もう少しコシがあった方が良いのですが、かと言って柔らかすぎず、流石プロの腕を感じました。
蕎麦湯がまた、ドロっとしてて、旨いのなんの。3杯飲んじゃいました。ごちそうさまでした。

A set rice (rice, small bowl, new incense) of 380 yen is added because there are many high-end restaurants that end up eating three mouthfuls. For rice, you can choose salmon, chicken soboro, jako, and clam tsukudani toppings for free.
The soba that has been brought in. Not as few as I expected. According to the word of mouth, it is 95% buckwheat flour and 5% binder. It's not cold in Kinkin, probably because you can enjoy the slightly spicy soup and the flavor of soba. As for my taste, which is not soba noodles, it would be better if it was a little more chewy, but it wasn't too soft and I felt the skill of a professional.
The soba hot water is also muddy and delicious. I drank 3 glasses. Thank you for the meal.

美味い！！
季節か蕎麦の香りはそれ程強くありませんでした
セット御飯を頼むと小鉢2皿+御飯が付きます
御飯の上に乗せる具材を数種類から選びます
忘れてしまったんだが、鶏そぼろ、鮭、、、etc
おつまみも日本酒も豊富にあるので、蕎麦をお供に飲むのも良さそう
また来たい
少ない人数でお店をやっているので待ち時間が伸びる可能性があるので、余裕を持って来店しましょう

夏の終わりにと夏限定「涼かけそば」と「せいろ」をいただきました。
涼かけそばは柚子が添えてあり上品な鰹出汁に好みで搾り爽やかさといただけます。
せいろの汁は醤油の味が若干効いて江戸前の気分を楽しめました。
何より一人で店を切り盛りしているとのことで注文が重なると待つことになりそうですが、丁寧で柔和な店主の手仕事が蕎麦に現されていて美味しい一品です

蕎麦の味だけで言うなら富嶽の方がおすすめですが、こちらは接客や内装や食器などの総合的な満足度がとても高いです。
ただ、張り紙にも書いてありますが調理中だったり接客中は待たされます。
逆に言えばそれだけ個々の客に向き合ってくれているとも言えると感じていて、十分満足できるお蕎麦屋さんです。
是非時間があるときに伺っていただきたいです。
蕎麦の割合は5分ぐらいなのかな？割合低めです。
それでも爽やかな風味を楽しめると思います。

一人で切盛りしているとのことなので提供はやや遅く回転率は悪そうだがお蕎麦はとても美味しい

気になってはいたものの、ランチのみの営業な上なかなか不便な場所にありお邪魔できず。
入口の注意書きから、癖強め系の店主なのかな…？
なんて思っていたのですが、むしろ逆。
物腰の柔らかい、とても丁寧な方で。
お客さんのことを気にかけるあまり注意書きが増えてしまった様子。
ひと作業終えた後でとても空腹だったので、鴨せいろの大盛りを注文。
麦茶もマメに入れてくださり、おひとりでの作業なのにすごく気配りが行き届いていました。
待つこと10分ほどでお蕎麦が到着。
細くてコシのある、とても香りも喉越しも良いお蕎麦。
蕎麦つゆも関東にありがちな濃すぎる味ではなく、鴨の香りが最高な蕎麦つゆ。
てか、鴨肉がうますぎてびびりました。
鴨せいろの鴨がこんなにおいしかったこと、今までにない！！！
肉肉しくって臭みもなく、鴨の旨味がぎゅんぎゅん。
このローストが食べたい。
最後まで気持ちの良い接客と、とても美味しいお蕎麦に大満足！！！
また必ず伺います。
