舞昆公式BASE店 - Maikon.base.shop
アケビの花びら天然酵母で、昆布を発酵熟成させることに成功しました。パイナップル・りんごをはじめとする果物を使い、複数のくだものを組み合わせて、素材の味を引き出しています。さらに大阪府立大学との共同研究で、昆布のほかに玄米や桑の葉も発酵原料に加え、ギャバもたっぷりの健康にいい塩昆布に仕上がりました。酵母のおかげでまろやかな旨味は「直火仕込製法」で、じっくりおいしさを閉じ込めて炊き上げられたのが塩昆布風発酵食品「舞昆」です。
