イタリア旅行時に食べた、本場のピザ屋のピザより美味しいと個人的に思っています。
空間としても素敵で、ふらっと入ってつい長居してしまいます。
妻と付き合いたての頃からお世話になってます。

★ ★ ★ ★ ★ プレオープンの日に訪問したのでまだオペレーションがぐだぐだだったけど、ピザはかなり美味しかった。薄い生地と濃厚モチモチのチーズが相性抜群。
ガスと薪のハイブリッド火力のモダンなピザ釜から漂う薪のほのかな香りが食欲をそそる。
ルッコラ×生ハムサラダもアフォガードも美味しい。満喫した。
再訪したい。むしろ全ピザ制覇したい。

2020年3月末のプレオープンで伺いましたが、元々ピザ好きが足繁く通う名店とのこと。
普段チェーン店のピザしか食べていないので、驚きの美味しさでした!
サラダとエスプレッソも頼み、お腹いっぱいで幸せな気分になれました!

まず日本でも世界でもこのピッツァの右に出るものにはお目にかからない。
ナポリのピッツァの有名店6店舗で働き、その技術科学的に裏付け、小麦粉の性質まで研究し、ピッツァ窯のクオリティにも妥協できず、自ら作り、いろいろなところからピザ窯作成の依頼を受け、自分でピッツァ窯職人を行いながら、超旨いナポリピッツァを提供する男がいる。
ちなみに、シェフはナポさん。
ナポリに魅せられ、ナポリのピッツァ名店を渡り修行してきた男。
皆は彼のことをリスペクトしてタクナポと呼ぶ。
日本にいるイタリア人にも有名な孤高の天才である。
彼は素材にも拘りを持つ本当に素晴らしいクオリティを提供してくれるプライドを持った偉大な職人である。
国産の小麦を使い、恐るべきをピッツァを提供する。彼の焼くピッツァはグルテンを形成する手前で圧を抑え、柔らかく、ソースと一体になりジューシーさを湛えたまるで「飲めるピッツァ。」あまりに美味しくて一気に食べ切り、ピッツァは飲み物だったと気付く。
グルテンはグルテニンとグリアジンが水を吸収して網目状に繋がったもので、絶妙な力でグルテン発生前に生地を仕上げて、飲める柔らかさのピッツァを出してくる。
このピッツァ、当然グルテン形成前にこだわりを持っているから、胃でも滞留せず食べてももたれず消化に良い。
天才の焼くピッツァはやはりレベルが違う。
テイクアウトもやってくれる。
コーヒーのエスプレッソにもこだわりがある。

★ ★ ★ ★ ★ Amazing food and hospitality! We enjoyed our x'mas night at Fakalo pizza gallery. Takuya-san is super friendly. The vibe was rustic, down to earth and, genuine, yet the food quality is great. It felt like a private chef's table. Totally recommend if you're visiting tokyo
