祖母の代から使っている憧れのブランドだったが、若い店員の態度が許せないほど最悪。同行した外国人には丁寧に接客するのに日本人にはとても横柄。購入目的で行ったのに気分が悪くなり1分で退店。隣接する別の有名店で購入しました。あちらのお店は何よりも対応が丁寧で心地よく買い物できます。

グレステンの包丁を研ぎに出して、こちらが開けて確認するのが遅かったのももちろん悪い。が、明らかに包丁の腹の部分が3分の1は削られている。別に保障目的でもなく、今後もこちらで研ぎたいので何かの間違いかと問い合わせ、写真を見せても「そう言われるお客様もいます。もしそんなに削りすぎたならこちらから渡す時に何か言うと思う」との一点張り。私の包丁はそんなに研がずに使っていたので新品とは言わずとも通常の使用した包丁よりも腹は厚く残っていたので「新品からほぼ変わらないですよ」と言うと「それはあり得ないですよ!お客さん!」とあたかもこちらが悪いかのような言い方。 別に保障してもらいたかったわけでもなく、歴史ある有次を受け継ぐ人たちがこうも利害だけに特化した対応だと日本の文化も落ちたなと思う。 包丁を研ぐ仕事の人間からすれば何万本研いでる中の一本かもしれないが、こちらからしたら何十年寄り添ってきた代用のできない腕のようなものなのに、それすらも伝わらないのかの嘆きました。 京都の有次に行った際にはこんなものなのかと聞いてみたいと思います。せめて京都の文化はそのままであって欲しい。築地有次が完全に独立していたとしても、職人の包丁への想いは忘れないでいて欲しかったです。 特に職人の方で、ステンレスの包丁を使っている方、こちらに研ぎに出す事は本当にやめてください。大事な包丁が半分の幅になって返ってきたら嫌ですよね?出されるのであれば、必ず出す前に写真を撮ることをお勧めします。私の包丁は4本、細く細くなって返ってきました。 泣くに泣けません。新しいのを買えばいいという問題ではないので。 これは嫌がらせでもなんでもないです。 「包丁を大事にされている方、本当に出さない方がいいです」

寿司屋で修行してたころに某有名店の大正から有次さんの包丁を勧めて頂いたのを思い出し、本日寄ってみました。刃先の角度や細かい要望まで、熱心に相談に乗ってくれて、とても納得のいく包丁に仕上げてくれました。都内で包丁を買うならまずここで間違いないです。ちなみに僕はペティナイフを購入しました。刃先をよく使うので曲線は控えめにまっすぐ、小ぶりな野菜の皮むきや薄切りに使うので片刃で仕上げて貰いました。とてもしっくりきてます。大切に使わせて頂きます。

Excellent craftsmanship, staff here are all personable and welcoming. After a numerous trips to Masamoto down the alley where we weren’t treated respectfully, we came back to Aritsugu to invest in several more commercial grade knives. Staff here are more fluent in English, in addition to their better customer service (“omotenashi” approach which should be observed in all traditional businesses). Highly recommend to those who are looking to invest in high quality handmade knives, with great customer service.

Excellent shop! We were having lunch nearby and told the shop owner we were going shopping for a knife and he walked us right down to Aritsugu and made an introduction. You can build your own knife- choose the blade, the type of steel, the handle, and they will also hand engrave it for you! It took about 30 minutes for them to build the knife once we made our selections. The prices were also fair and very competitive with other shops we had visited. The staff spoke just enough English to work with our bad Japanese, but they were super kind and helpful. The whole experience was really fantastic and I would highly recommend it!
